I've cooked a wholesome bowl for this weeks edit….
Blackened Sumac Salmon goodness bowl
Serves 2
I made this Sunday night which felt so wholesome, sitting in front of the fire munching on this was SO perfect! (And its really easy!)
Salmon fillets x2
1 teaspoon Sumac, 1/2 teaspoon smoked paprika, 1/2 teaspoon cumin.
Olive oil
Mix the oil, sumac paprika cumin and a pinch of salt, using a brush coat the salmon fillets all over with the mix and set aside.
1 avocado, chopped into chunks
Brussels sprouts, as many as you’d like! Halved tossed in soy sauce with a drizzle of maple syrup…place in a baking tray and place in the oven for 20 mins. For the last 3 mins add a small handful of pumpkin seeds and cook for the last few mins.
4oz Quinoa
Cook the Quinoa in salted water (i add a teaspoon of bouillon for added flavour
until soft and the water has been absorbed, (i usually place it in the bottom of my aga to dry out a bit). Once the Quinoa is cooked toss in a little oil and salt.
Make a dressing using 3 tbsp olive oil, 1 tbsp vinegar, 1 tsp Dijon mustard and a pinch of sugar, whisk together, set aside.
Take a heavy based fry pan (skillet) and place on a high heat, once smoking add a knob of butter and some olive oil, then add a sliced red onion to the pan and fry off carefully do not burn them, shake the pan regularly…Add the salmon skin side down and cook for about 3 mins, carefully turn the salmon over and cook for a couple of minutes.
Spoon the quinoa into a shallow bowl add some shedded lettuce drizzle with the dressing. Add the Salmon, onions, Brussels sprouts and avocado sprinkle with black sesame seeds….and a squeeze of lemon!
Serve and ENJOY!
